A weak electrical field moves tartrates through the membranes while wine passes by. Membranes select by shape charge and size. - Check conductivity
Real time measurement ensures stability
STABILAB determines the conductivity reduction for each individual wine at a predetermined test temperature through the relationship between temperature and conductivity of untreated wine and saturated wine.
STARS is controlled by the change in conductivity resulting from removal of ionic salts of tartrate from the wine.
STARS reduces conductivity to STABILAB’s target by moving micro-layers of wine between two selectively permeable membranes.
STARS monitors the conductivity of the treated wine in real time to ensure that the target is achieved and the wine is stable.
