"Gravity on Demand" speeds up the most time-consuming aspects of winemaking.
A centrifuge does the same thing as gravity, only much faster. Solids in suspension will eventually settle out of a liquid due to gravity. In a centrifuge, gravity or the acceleration of gravity (g's) is magnified up to 15,000 times by centrifugal force. The heavier or larger a particle in suspension, the easier it is to remove through the use of a centrifuge.
